Chosen with the highest care by Catherine Corbeau Mellot and Norbert Buchonnet during the latest harvest for its very typical style, among the Joseph Mellot vineyards on the silex terroir.

 

Terroir

Silex plot facing South / South-East.

Vinification

Hand-picked and destalked harvest. Following cold static settling and selection of press juice, fermentation takes place at low temperature in stainless steel tank. Aged on fine lees for seven months.

 

Characteristics

The color is pale gold with green highlights. It opens at once with a very expressive nose of white flowers such as lime blossom and acacia, then citrus fruits and flint.

At first full-bodied in the mouth, it develops clarity on a good sharpened structure. Its lovely ending, lengthy and mineral, unambiguously reminds one of its Sancerre noble origin.

 

Serving suggestions

It can be enjoyed from now on with a goat cheese such as the Crottin de Chavignol, for a regional harmony. It is intended also for gastronomy combining fish with great white wines.
