To achieve livestock certain wines in oak barrels , available in our old cellar in the village center of Sancerre and a set of drums . The wood from local forests ( St Palais and Allogny ) and the barrels are made by local coopers .
Assembling the staves
In these photos , the cooper assembles the barrel . Each piece is called oak stave . The set of staves is maintained by metal strapping
This manufacturing step is called up in pink. The barrel then takes shape before the heating step
The heater is an essential step in the manufacture of the barrel. First it allows ceintrage staves . Then it is heated to determine the aromas What will the barrel (vanilla , toast ...). The duration of the heating will determine the intensity of these flavors.
