TERROIR

Our vines are planted on very steep slopes with flint-rich soil.
This type of terroir does not exist throughout the entire appellation wich gives this wine its unique character. The grapes are handpicked and sorted.

VINIFICATION

Traditional vinification in tanks. Malolactic fermentation takes place in oak barrels from France’s Centre region (Saint Palais and Allogny forests). Aged for a total of 10 months with a proportion of 1/3 new oak in our 12th century cellars in Sancerre.

CHARACTERISTICS

Deep ruby red in colour with brilliant highlights.
An elegant nose combines empyreumatic notes from the wine’s barrel ageing with aromas of blackberry.
Round on the palate revealing beautiful tannic structure.
This wine’s aromatic length and long finish suggest excellent ageing potential.

SERVING SUGGESTIONS

This wine’s structure makes it a good match for winter dishes such as game and stews.
Ideal serving temperature : 14° to 16°C.
